The GEA Westfalia MZB10 continuous quark mixer is used within a quark
line for continuous mixing of fat quark, fruit quark or spiced quark
as well as for continuous dosing of cream. The two components to be
mixed (quark and cream) are intensively mixed with the rotating mixing
blades as they flow through the mixing head in the mixing cylinder.
The mixture goes out of the unit by the outlet / drain pipe on top.
The quark mixer is rotating at constant speed, produces a uniform
cream quark of fine texture from the low-fat quark and cream which are
fed to the mixer at constant rate. At regular intervals samples should
be taken from the quark leaving the mixer. The mixing blade is attached
directly to the motor shaft. A hermetically shaft seal, seals the
mixing chamber from the motor compartment. The mixing head can be
dismantled in just a few steps and easily cleaned without the need for
specialist personnel. Because of their solid consistency, fruit
concentrates or spices must be mixed into a carrier liquid, usually
cream, and added using a lobe pump. Because the fruit concentrate can
contain whole fruits, the mixture must be combined with the low-fat
curd before the mixer using a T-piece built into the low-fat curd
line. The quark mixer is cleaned inline with the CIP. H5953732
